Luscious Lemon-Lime Cherry Pistachio Cheesecake 🍋🍒
Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup melted butter
3 (8 oz) packages cream cheese, softened
1 cup sugar
1 tsp vanilla extract
3 large eggs
1/4 cup lemon juice
1/4 cup lime juice
1 tbsp lemon zest
1 tbsp lime zest
1/2 cup chopped pistachios
1 cup cherry preserves
Instructions:
Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
Beat cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, beating until blended.
Add eggs, one at a time, beating well after each addition.
Mix in lemon juice, lime juice, lemon zest, and lime zest until fully combined.
Fold in chopped pistachios.
Pour half of the batter over the crust. Spoon cherry preserves over batter. Pour remaining batter on top.
Bake at 325°F (160°C) for 55-60 minutes. Cool on a wire rack, then refrigerate for at least 4 hours.
Notes:
Garnish with additional chopped pistachios and lemon-lime zest for a colorful finish.
