Bacon Mushroom Swiss Cheese Meatloaf
Ingredients:
1 pound ground beef
1/2 pound ground pork
1/2 cup milk
1/4 cup bread crumbs
1 large egg, lightly beaten
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 cup chopped onion
8 slices bacon, cooked and crumbled
8 ounces cremini mushrooms, sliced and sautéed
4 ounces Swiss cheese, sliced
Instructions:
1. Preheat oven to 375°F (190°C). Grease a 9x5 inch loaf pan.
2. In a large bowl, combine ground beef, ground pork, milk, bread crumbs, egg, salt, pepper, garlic powder, and onion powder. Gently mix until just combined. Do not overmix.
3. Stir in the chopped onion, crumbled bacon, and sautéed mushrooms. Mix until evenly distributed throughout the meat mixture.
4. Transfer the meat mixture to the prepared loaf pan and shape it into a loaf.
5. Arrange the slices of Swiss cheese over the top of the meatloaf.
6. Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). You may loosely tent the meatloaf with foil during the last 15-20 minutes of baking to prevent it from browning too much on top.
7. Let the meatloaf rest for 10 minutes before slicing and serving. This allows the juices to redistribute, resulting in a more tender and flavorful meatloaf. Serve hot and enjoy!
