Ingredients:
*For the Dough:
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1/2 cup cold water (as needed)

For the Filling:
- 1 lb ground beef - 1 small onion, diced - 2 cloves garlic, minced
- 1 teaspoon cumin - 1 teaspoon smoked paprika - 1 teaspoon chili powder - 1/2 teaspoon cayenne pepper (adjust for spice level)
- Salt and pepper to taste - 1/4 cup chopped fresh cilantro (optional)
- 1 egg (for egg wash)

Instructions:**
1. * In a large bowl, mix the flour and salt. Add the chilled butter and use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs. Gradually add cold water, mixing until a dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

2. * In a skillet over medium heat, cook the diced onion until softened. Add the minced garlic and cook for another minute. Then, add the ground beef, breaking it apart with a spoon, and cook until browned. Stir in the cumin, smoked paprika, chili powder, cayenne pepper, salt, and pepper. Cook for a few more minutes to allow flavors to meld. Stir in chopped cilantro if using. Remove from heat and let it cool slightly.

3. * Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the dough to about 1/8 inch thick. Cut into 4-6 inch circles. Place a spoonful of the beef filling in the center of each circle. Fold the dough over to form a half-moon shape, and crimp the edges with a fork to seal.
