5-Ingredient Cake
Ingredients:
* 240 grams whipping cream
* 6 eggs
* 72 grams sugar (60g + 12g)
* 100 grams cake flour
* A squeeze of lemon juice
Instructions:
1. Separate the egg yolks and whites.
2. Mix the yolks with whipping cream and 12g of sugar. Sift in the flour and mix well.
3. Beat the egg whites until foamy, then add the lemon juice and 60g of sugar in batches. Continue whisking until stiff peaks form.
4. Fold a small portion of the meringue into the yolk mixture, then fold in the rest until evenly combined. (Do not overmix)
5. Pour the batter into a baking pan and tap it 2-3 times on the table to remove air bubbles.
6. Bake in a preheated oven at 135°C in a water bath for 70 minutes.
7. Let cool, cut, and enjoy
