Ingredients:
3 large ripe peaches, peeled, pitted, and diced
ΒΎ cup granulated sugar (divided)
1 tsp lemon juice
2 cups heavy cream
1 cup whole milk
1 tsp vanilla extract
ΒΌ tsp salt
Directions:
Prepare the Peaches:
In a bowl, toss the diced peaches with ΒΌ cup of sugar and lemon juice.
Let sit for 15-20 minutes to release juices, then mash slightly with a fork.
Make the Ice Cream Base:
In a separate bowl, whisk together heavy cream, whole milk, remaining Β½ cup sugar, vanilla extract, and salt until sugar dissolves.
Combine & Chill:
Stir the mashed peaches into the ice cream base.
Cover and chill in the refrigerator for at least 2 hours (or overnight for best results).
Churn the Ice Cream:
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions (typically 20-30 minutes).
Freeze & Serve:
Transfer to an airtight container and freeze for 2-4 hours to firm up.
