600g boneless chicken thighs or breasts, cut into chunks ๐
600g baby potatoes or regular potatoes, chopped ๐ฅ
1 red bell pepper, diced
2 carrots, sliced
1 small broccoli head, cut into florets ๐ฅฆ
3 tbsp olive oil ๐ซ
3 garlic cloves, minced ๐ง
1 tbsp lemon juice ๐
1 tsp paprika
1 tsp dried oregano or Italian herbs ๐ฟ
Salt & pepper to taste
Optional: a sprinkle of chili flakes for a spicy touch ๐ถ๏ธ
๐จโ๐ณ Instructions:
Preheat oven to 200ยฐC (400ยฐF).
In a large mixing bowl, combine olive oil, garlic, lemon juice, paprika, herbs, salt, and pepper to create a marinade.
Add chicken pieces and potatoes to the bowl and toss well until coated.
Spread the mixture evenly into a large baking dish. Cover with foil and bake for 25 minutes.
Remove foil, add broccoli, bell pepper, and carrots, mix slightly, and bake uncovered for another 15โ20 minutes until chicken is golden and veggies are tender.
Garnish with fresh herbs if desired and serve warm.
