Paleo Zoodle & Meatball Bowl with Creamy Garlic Sauce ☀️

Ingredients:

For the Meatballs:

1 pound ground beef or pork
1/4 cup chopped onion
2 cloves garlic, minced
1/4 cup breadcrumbs (optional, for binding)
1 egg
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon oregano
1/4 teaspoon dried basil
For the Zoodles:

2 medium zucchini, spiralized
For the Creamy Garlic Sauce:

1/2 cup plain Greek yogurt
2 tablespoons olive oil
1 clove garlic, minced
1 tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions:

Make the Meatballs: In a large bowl, combine ground meat, onion, garlic, breadcrumbs (if using), egg, salt, pepper, oregano, and basil. Mix well. Form into small meatballs.
Cook the Meatballs: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the meatballs for 5-7 minutes per side, or until cooked through.
Make the Creamy Garlic Sauce: In a small bowl, whisk together Greek yogurt, olive oil, garlic, lemon juice, salt, and pepper.
Assemble the Bowls: Divide the zoodles among bowls. Top with meatballs and drizzle generously with the Creamy Garlic Sauce.
Tips:

You can use any type of ground meat you like for this recipe.
For a spicier sauce, add a pinch of red pepper flakes to the Creamy Garlic Sauce.
Serve the bowls with your favorite side dishes, such as a green salad or a side of roasted vegetables.
