Grandma’s Little Layer Caramel Cake (Along with a Boxed Cake Mix Hack In The Notes)

**Cake
1 cup butter (2 sticks)
2 1/2 cups sugar
1/4cup butter flavored shortening
1/4 cup vegetable oil
6 large eggs
4 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1/8 teaspoon salt
1 cup buttermilk
2 cups milk
2 teaspoons vanilla extract
**Caramel icing
1 cup (2 sticks) butter
2 cups light brown sugar
10 oz. Carnation evaporated milk
2-1/2 cups powdered sugar
2 teaspoon vanilla extract
Pinch salt

Preheat oven to 350:degrees.
I use disposable aluminum cake pans because they work best. I line them with parchment paper. Lightly spray each pan with Bakers Joy. Set aside.
In a large bowl, cream together sugar, butter and shortening. Add eggs one at a time, mixing well after each egg. Mix in vanilla extract and oil and set aside.
In a large bowl, mix together flour, salt and baking powder. Add dry ingredients into the wet ingredients, alternating and making sure you scrape down the sides of the bowl. Pour 1/2 cup batter into each prepared pan and spread into an even layer.
Bake for 7 to 8 minutes, until the edges are lightly golden and the center is set.
Remember all stoves cook differently, check your time so you will know exactly how long your oven takes. Do not over bake. The cake continues to cook as it cools.
Once pans are cool to the touch, remove from the pan and place on cooling rack or wax paper to cool.
I usually do in 3 sets of 5 at the time. You can reuse the 5 disposable pans or use 15 disposable pans.
I get them 4 for 1.00 at the dollar store. You can wash and reuse them a couple of times before disposing of.
Make your icing while your cakes are cooling.
**Caramel Icing
Melt butter in a large saucepan, blend in brown sugar, and pinch of salt and stir. Cook over low heat 2 to 3 minutes. Add your evaporated milk and bring to a rolling boil, stirring constantly. Remove from heat, blend in your powdered sugar and vanilla. Beat until smooth and the correct icing consistency.
**Note...This is a very difficult icing for some people to make. The consistency and the weather has to be just right. If the cake seems a little hard for you to make, take 2 boxes of yellow cake mix, mix according to the box instructions and use the box cake mix in place of the homemade batter. Bake accordingly to the instructions above and ice the cake with the caramel icing. I have had so many people thank for for showing them this cakemix hack. There are even some bakeries using the box cake mix hack as well.
