🍪 M&M Cookie Bars 🍫
Ingredients
1 cup (2 sticks) unsalted butter, softened
1 cup packed light brown sugar
¾ cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon fine sea salt (or 1 teaspoon kosher salt)
1 cup semi-sweet chocolate chips
1 cup M&M’s candies (plus extra for topping, if desired)
Instructions
Prep: Preheat your oven to 325°F (165°C). Line a 9×13-inch baking pan with parchment paper or aluminum foil, leaving an overhang on two sides for easy removal. Lightly grease the lining with nonstick spray.
Cream wet ingredients: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together with a hand or stand mixer for about 1 minute, until light and fluffy. Add the eggs one at a time, mixing well after each, then blend in the vanilla.
Add dry ingredients: Gradually stir in the flour, baking soda, and salt just until no dry streaks remain—avoid overmixing to keep the bars tender.
Fold in mix-ins: Gently fold in the chocolate chips and 1 cup of M&M’s. Reserve a small handful of each for topping, if desired.
Press into pan: Transfer the dough to the prepared pan and use a spatula or your hands to press it into an even layer. Scatter the reserved M&M’s and chocolate chips over the top, gently pressing them into the surface.
Bake: Place in the oven and bake for 30–35 minutes (for a 9×13-inch pan) until the edges are set and the center is just barely golden—note that the bars will look slightly underdone but will firm up as they cool.
Cool and slice: Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment overhang. Cut into squares or rectangles and serve.
