Boston Cream Pie Cheesecake ๐ฐ๐ซ๐ฎ
Ingredients:
2 cups graham cracker crumbs ๐ช
1/2 cup unsalted butter, melted ๐ง
1/4 cup granulated sugar ๐ฌ
3 (8 oz) packages cream cheese, softened ๐ง
1 cup granulated sugar ๐ฌ
3 large eggs ๐ฅ
1 teaspoon vanilla extract ๐ฆ
1 cup heavy cream ๐ฅ
2 tablespoons cornstarch ๐พ
1 cup whole milk ๐ฅ
1/4 cup granulated sugar ๐ฌ
2 large egg yolks ๐ฅ
2 tablespoons cornstarch ๐พ
1 teaspoon vanilla extract ๐ฆ
Directions:
1. Preheat your oven to 325ยฐF (163ยฐC). In a bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Press this mixture firmly into the bottom of a springform pan.
2. In a large mixing bowl, beat the softened cream cheese with 1 cup of granulated sugar until itโs nice and smooth. Add the eggs one at a time, making sure to mix well after each addition. Stir in 1 teaspoon of vanilla extract.
3. Pour the silky cream cheese mixture over the crust in your springform pan. Bake for about 50 minutes, or until the center is set. Once done, let it cool.
4. For the luscious cream filling, combine the heavy cream, 1/4 cup of granulated sugar, egg yolks, milk, and cornstarch in a saucepan. Cook over medium heat, stirring constantly, until it thickens up beautifully. Remove from heat and stir in the remaining 1 teaspoon of vanilla extract.
5. Pour this delectable cream filling over your cooled cheesecake and refrigerate until set, about 4 hours. When youโre ready to serve, enjoy it chilled!
