Cheesy Rotel Soup with Smoked Sausage
Ingredients:
- 1 lb smoked sausage, sliced
- 1 can Rotel tomatoes
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. In a large pot, cook smoked sausage until browned.
2. Add onion, bell pepper, and garlic, cook until softened.
3. Add Rotel tomatoes, chicken broth, and heavy cream. Simmer for 20 minutes.
4. Stir in shredded cheddar cheese until melted.
5. Season with salt and pepper to taste.
