Tex-Mex Taco Casserole
Ingredients:
- 1 lb ground beef
- 1 small onion, finely chopped
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 can sliced black olives
- 1 package tortilla chips
Instructions:
1. Preheat oven to 350°F.
2. In a skillet, cook ground beef and onion until beef is browned and onion is translucent.
3. Add taco seasoning, black beans, corn, diced tomatoes, and half of each cheese to the skillet. Stir to combine.
4. In a greased casserole dish, layer a third of the tortilla chips, followed by a third of the meat mixture. Repeat layers twice more.
5. Top with remaining cheese and sliced black olives.
6. Bake for 20-25 minutes, until cheese is melted and bubbly.
7. Serve hot and enjoy!
