So delicious and Creamy Bruschetta Dip!
I got lots of tomatoes in my garden. So, I decided to make Bruschetta dip. It was everybody’s favorite dip now!
I use cherry tomatoes but you can use whatever tomatoes available. Make sure to slice it into small chunks.
Ingredients:
Tomato marinade:
2 cups tomatoes - diced
1 tablespoon olive oil
1 tablespoon Balsamic vinegar
2 tablespoons fresh parsley (minced)
1 garlic clove minced
1/4 teaspoon black pepper
1/4 teaspoon salt
Mix well and set aside.
Creamy Cheese:
1 -15 oz Ricotta Cheese
1/2 cup Greek yogurt
1/4 teaspoon garlic powder
2 tablespoons fresh parsley
1 tablespoon fresh parsley
1/4 teaspoon salt and pepper
Mix well and pour in the bottom of a container.
Then, layer on top -the marinated tomatoes. Spread evenly. Chill in refrigerator until ready to serve. Enjoy!
