🍎 Apple Crisp Bars 🍪
Ingredients
For the crust and topping:
1 ½ cups (190g) all-purpose flour
1 cup (90g) old-fashioned rolled oats
¾ cup (150g) granulated sugar
½ cup (100g) packed light brown sugar
1 teaspoon ground cinnamon
¼ teaspoon salt
¾ cup (170g) cold unsalted butter, cubed
For the apple filling:
3 cups (about 3 medium) peeled, cored, and finely diced apples (Granny Smith or Honeycrisp recommended)
2 tablespoons granulated sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1 tablespoon all-purpose flour
Instructions
Preheat & prep: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly grease any exposed pan edges.
Make the crust mixture: In a large bowl, whisk together flour, oats, both sugars, cinnamon, and salt. Add the cold cubed butter. Using a pastry cutter, fork, or your fingers, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining.
Layer the base: Reserve 1 cup of the crumb mixture for the topping. Press the remaining mixture firmly and evenly into the bottom of the prepared pan. Use the bottom of a measuring cup or glass to smooth and compact it.
Prepare the filling: In a medium bowl, toss the diced apples with sugar, lemon juice, cinnamon, and flour until well coated. Spread this mixture evenly over the crust.
Add the topping: Sprinkle the reserved crumb mixture evenly over the apples, covering as much surface as possible (it’s okay if some apple peeks through).
Bake: Place in the center of the oven and bake for 40–45 minutes, or until the topping is golden brown and the apple filling is bubbling at the edges.
Cool completely: Let the bars cool in the pan on a wire rack for at least 2 hours before lifting them out using the parchment overhang. Cut into 12 squares or rectangles.
