🛒 Ingredients:
For the Chicken & Sauce 🍗:
2 large chicken breasts, cut into strips
2 tbsp olive oil
Salt & pepper to taste
2 tbsp butter
2 garlic cloves, minced
200 ml heavy cream
50 g grated Parmesan
1 tsp Dijon mustard (optional)
Fresh chives or parsley for garnish
For the Roasted Potatoes 🥔:
500 g baby potatoes, sliced in halves
2 tbsp olive oil
1 tsp dried thyme or rosemary
Salt & pepper
For the Roasted Tomatoes 🍅:
250 g cherry or cocktail tomatoes
1 tsp olive oil
Pinch of salt
👨🍳 Instructions:
Preheat oven to 200°C (400°F). Toss potato halves with olive oil, thyme, salt, and pepper, then roast for 25–30 minutes until golden. Add tomatoes (drizzled with oil and lightly salted) to the baking tray for the last 12 minutes of cooking. Meanwhile, season chicken with salt and pepper, sear in a hot skillet with olive oil until golden and cooked through. Remove, then melt butter in the same pan, sauté garlic briefly, stir in cream, Parmesan, and mustard, and simmer until thickened. Return chicken to coat in sauce. Plate with roasted potatoes, blistered tomatoes, and creamy garlic chicken. Sprinkle with chives or parsley.
