π Dreamy Strawberry Swirl Cheesecake Recipe

Crust:
β’ 1 Β½ cups graham cracker crumbs (or digestive biscuits)

cup (75g) unsalted butter, melted
β’ 2 tbsp sugar
Cheesecake Filling:
β’ 4 (8 oz) packages cream cheese, softened
β’ 1 cup granulated sugar
β’ 1 tsp vanilla extract
β’ 4 large eggs
β’ Β½ cup sour cream
β’ ΒΌ cup heavy cream
Strawberry Swirl:
β’ 1 cup fresh or frozen strawberries
β’ ΒΌ cup sugar
β’ 1 tsp lemon juice
π©βπ³ Instructions:
1 Preheat oven to 325Β°F (160Β°C). Grease a 9-inch springform pan.
2 Mix graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the pan. Bake crust for 10 minutes. Let cool.
3 In a blender or food processor, puree strawberries with sugar and lemon juice until smooth.
4 Beat cream cheese and sugar until smooth. Add vanilla extract.
5 Add eggs one at a time, mixing well after each.
6 Stir in sour cream and heavy cream until fully combined.
7 Pour half of the cheesecake filling over the crust.
8 Drop spoonfuls of strawberry puree over the filling, then pour the remaining cheesecake batter on top.
9 Use a knife or skewer to gently swirl the strawberry puree through the batter.
10 Bake for 55β65 minutes, until edges are set but center is slightly jiggly.
11 Turn off oven and leave cheesecake inside with the door slightly open for 1 hour.
12 Cool completely, then refrigerate at least 4 hours or overnight.
