βπ° Gooey Cinnamon Coffee Cake Recipe
This is not your dry diner-style coffee cake β this version is soft, moist, and gooey in the center, with a cinnamon-sugar swirl and a crumbly streusel topping. It's the kind of cake that disappears in one sitting.
β¨ Ingredients:
For the cake batter:
β’ 1 cup (230g) unsalted butter, softened
β’ 1 cup (200g) granulated sugar
β’ Β½ cup (100g) brown sugar
β’ 2 large eggs
β’ 1 cup (240ml) sour cream or Greek yogurt
β’ 1 tsp vanilla extract
β’ 2 cups (250g) all-purpose flour
β’ 1 tsp baking powder
β’ Β½ tsp baking soda
β’ ΒΌ tsp salt
For the cinnamon sugar swirl (gooey part!):
β’ Β½ cup (100g) brown sugar
β’ 2 tsp ground cinnamon
β’ 2 tbsp melted butter
For the streusel topping:
β’ Β½ cup (100g) brown sugar

cup (40g) all-purpose flour
β’ 2 tsp cinnamon
β’ ΒΌ cup (60g) cold butter, cubed
π©βπ³ Instructions:
1 Preheat oven to 175Β°C (350Β°F). Grease a 9x9" or 8x8" pan.
2 In a large bowl, cream butter and sugars until fluffy.
3 Add eggs one at a time, then mix in sour cream and vanilla.
4 In a separate bowl, whisk flour, baking powder, baking soda, and salt.
5 Add dry ingredients to wet ingredients, mix until smooth (do not overmix).
6 Mix swirl ingredients in a small bowl β brown sugar, cinnamon, and melted butter.
7 Spread half of the cake batter into the pan. Drizzle the cinnamon swirl evenly over it. Then spread the remaining batter on top.
8 Make the streusel topping: Mix brown sugar, flour, and cinnamon. Cut in cold butter with a fork until crumbly. Sprinkle on top of the cake.
9 Bake for 35β40 minutes, or until the center is just set. A little gooey is good! Let cool slightly before slicing.
