Ingredients
For the Chicken:
🐓 Chicken Breast: 1 lb (2 large pieces)
🍯 Honey: 2 tbsp
🧄 Garlic: 3 cloves, minced
🥛 Soy Sauce: 2 tbsp
🛢️ Olive Oil: 1 tbsp
🍋 Lemon Juice: 1 tbsp
🧂 Salt & Pepper: To taste
For the Rice:
🍚 Basmati Rice: 1 cup, uncooked
💦 Water: 2 cups
🧈 Butter: 1 tbsp
🌿 Fresh Parsley: 2 tbsp, chopped
🧂 Salt: 1/2 tsp
For the Tomato Salad:
🍅 Cherry Tomatoes: 1 cup, halved
🌿 Fresh Basil: 2 tbsp, chopped
🛢️ Olive Oil: 1 tbsp
🧂 Salt & Pepper: To taste
For the Cucumber Slices:
🥒 Cucumber: 1, thinly sliced
🍋 Lemon Juice: 1 tsp
🧂 Salt & Pepper: To taste
For the Avocado:
🥑 Avocado: 1 large, sliced
Directions
Marinate the Chicken:
In a bowl, mix honey, garlic, soy sauce, olive oil, lemon juice, salt, and pepper. Add chicken breasts and coat evenly. Marinate for at least 15 minutes.
Cook the Chicken:
Heat a grill pan or skillet over medium heat. Cook chicken for 5-6 minutes per side, basting with marinade until caramelized and cooked through (internal temp: 165°F). Let rest for 5 minutes, then slice.
Cook the Rice:
Rinse rice, then bring water to a boil. Add rice, butter, and salt. Cover and simmer on low heat for 15 minutes until fluffy. Stir in chopped parsley before serving.
Prepare the Tomato Salad:
In a bowl, toss cherry tomatoes with olive oil, basil, salt, and pepper.
Season the Cucumber:
Toss cucumber slices with lemon juice, salt, and pepper.
Assemble the Bowl:
Start with herbed rice as the base. Add grilled chicken slices, a scoop of tomato salad, seasoned cucumber slices, and avocado. Serve immediately.
