Easy Rhubarb Cheesecake Squares
Sweet graham crust, creamy filling & fruity rhubarb topping – what’s not to love?
You’ll need:
Rhubarb Mix:
Rhubarb – 5 cups
Sugar – ¾ cup
Water – 1 tbsp
Cornstarch – 3 tsp
Crust Layer:
Graham cracker crumbs – 1½ cups
Sugar – ⅓ cup
Butter – ½ cup (melted)
Cheesecake Center:
Cream cheese – 16 oz
Sugar – ⅔ cup
Eggs – 2
Vanilla – 1 tsp
Instructions:
Cook rhubarb until soft, stir in cornstarch mix to thicken.
Mix crust, press into pan, and bake.
Blend filling and pour over crust.
Top with rhubarb.
Bake, cool, chill, and enjoy every creamy bite!
