Cheesy Mac and Meatloaf Layered Casserole
Ingredients:
1 lb ground beef
1/2 cup breadcrumbs
1 egg
1/2 cup milk
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup ketchup
For the Mac and Cheese Layer:
2 cups elbow macaroni
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
2 cups shredded cheddar cheese
1/2 teaspoon salt
1/2 teaspoon paprika
For Topping:
1/2 cup panko breadcrumbs
2 tablespoons melted butter
1/2 cup shredded mozzarella cheese
Directions:
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
In a bowl, mix ground beef, breadcrumbs, egg, milk, salt, pepper, Worcestershire sauce, garlic powder, onion powder, and ketchup. Press the mixture evenly into the bottom of the baking dish.
Bake for 25 minutes, then remove from the oven.
While the meatloaf bakes, cook the macaroni according to package instructions, then drain.
In a saucepan over medium heat, melt butter and whisk in flour. Cook for 1 minute, then slowly whisk in milk. Stir until thickened, about 3 minutes.
Add shredded cheddar cheese, salt, and paprika. Stir until smooth, then mix in cooked macaroni.
Spread the mac and cheese layer over the baked meatloaf base.
In a small bowl, mix panko breadcrumbs with melted butter. Sprinkle over the casserole, then top with shredded mozzarella cheese.
Bake for another 15 minutes, or until the top is golden and bubbly. Let rest for 5 minutes before serving.
