Onion Rings with Zesty Ketchup
Ingredients:
For the Onion Rings:
2 large yellow onions, thinly sliced into rings (about 1/2 inch thick)
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/2 teaspoon onion powder
1 cup ice water
Vegetable oil, for frying (about 3 cups)
For the Zesty Ketchup:
1 cup ketchup
2 tablespoons apple cider vinegar
1 tablespoon brown sugar
1 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon cayenne pepper (optional, for extra heat)
Instructions:
1. Prepare the Onions: Separate the onion rings and gently pat them dry with paper towels. This helps them crisp up better.
2. Make the Batter: In a large bowl, whisk together the flour, salt, pepper, paprika, garlic powder, and onion powder. Gradually whisk in the ice water until a smooth batter forms. The batter should be thick, but pourable. If it's too thick, add a little more ice water; if it's too thin, add a little more flour.
3. Fry the Onion Rings: Heat the vegetable oil in a large, heavy-bottomed pot or deep fryer to 375°F (190°C). Use a thermometer to ensure the oil reaches the correct temperature. Working in batches, dip the onion rings into the batter, ensuring they are fully coated. Carefully lower the battered onion rings into the hot oil, avoiding overcrowding the pot. Fry for 2-3 minutes per side, or until golden brown and crispy.
4. Drain and Season: Remove the fried onion rings from the oil using a slotted spoon and place them on a wire rack or paper towel-lined plate to drain excess oil. Season immediately with a pinch of salt.
5. Make the Zesty Ketchup: While the onion rings are frying, prepare the zesty ketchup. In a small saucepan, combine the ketchup, apple cider vinegar, brown sugar, Dijon mustard, Worcestershire sauce, and cayenne pepper (if using). Bring to a simmer over medium heat, stirring occasionally. Reduce heat to low and simmer for 5-7 minutes, or until slightly thickened. Remove from heat and let cool slightly.
