Cheesy Chicken Enchiladas
Ingredients:
2 cups cooked shredded chicken
1 can (10 oz) red enchilada sauce
1 can (10 oz) green enchilada sauce (optional for extra flavor)
1 cup sour cream (plus more for topping)
2 cups shredded cheddar cheese (or Mexican blend)
1 cup shredded mozzarella (optional, for extra cheesiness)
1 tsp garlic powder
1 tsp cumin
Salt & pepper to taste
6–8 flour tortillas
Fresh cilantro, chopped (for garnish)
Directions:
1. Preheat oven to 375°F (190°C).
2. In a bowl, mix shredded chicken, ½ cup of red enchilada sauce, ½ cup cheese, garlic powder, cumin, and a bit of salt & pepper.
3. Fill each tortilla with chicken mixture, roll it up, and place seam-side down in a greased 9x13 baking dish.
4. Pour remaining enchilada sauce (mix red + green if using both) over the top.
5. Spread sour cream over the sauce layer (optional).
6. Top generously with remaining cheese.
7. Cover with foil and bake for 20 minutes. Remove foil and bake an extra 10 minutes until bubbly and golden.
8. Garnish with fresh cilantro and a dollop of sour cream.
