Mushroom Swiss Cheese Meatloaf ππ§π
Ingredients:
For the Meatloaf:
β’ 2 lbs ground beef (or mix with ground pork)
β’ 1 cup breadcrumbs
β’ 2 large eggs
β’ 1/2 cup milk
β’ 1/2 cup finely chopped onion
β’ 2 cloves garlic, minced
β’ 1 tablespoon Worcestershire sauce
β’ 1 teaspoon salt
β’ 1/2 teaspoon black pepper
β’ 1/2 teaspoon Italian seasoning
For the Topping:
β’ 1 1/2 cups sliced mushrooms
β’ 1 tablespoon butter
β’ 1 tablespoon olive oil
β’ 1 tablespoon all-purpose flour
β’ 1 cup beef broth
β’ 1 cup shredded Swiss cheese
β’ Fresh parsley, chopped (for garnish)

Instructions:
1. Prepare the Meatloaf
1. Preheat oven to 375Β°F (190Β°C).
2. In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire sauce, salt, pepper, and seasoning.
3. Mix until just combined, then shape into a loaf and place in a baking dish.
4. Bake uncovered for 45β50 minutes, or until internal temp reaches 160Β°F (71Β°C).

2. SautΓ© the Mushrooms & Make the Gravy
1. In a skillet, melt butter and olive oil over medium heat.
2. Add mushrooms and cook until browned and soft (about 6β8 minutes).
3. Stir in flour and cook for 1 minute, then slowly whisk in beef broth.
4. Simmer until thickened (about 3β5 minutes), season with salt and pepper.

3. Add Cheese & Mushrooms
1. After baking, remove meatloaf from the oven.
2. Sprinkle Swiss cheese over the top and return to oven for 5β7 minutes, until melted and bubbly.
3. Spoon the mushroom gravy on top of the melted cheese.

4. Serve
β’ Garnish with fresh parsley, slice, and serve hot with mashed potatoes, green beans, or roasted veggies.

β’ Want extra flavor? Add a bit of Dijon mustard to the meat mixture.
