Mackerel Patties 🐟✨
Ingredients:
1 (15 oz) can Chicken of the Sea® Mackerel in Water, drained, bones and skin removed
1 cup diced red bell peppers
¼ cup cooked, chopped bacon
2 Tbsp shredded Parmesan cheese
2 Tbsp chopped parsley
½ tsp cayenne pepper (adjust to taste)
2 eggs, beaten
1 cup seasoned bread crumbs (or crushed pork rinds for low-carb/gluten-free option)
2 Tbsp olive oil (for frying)
✔ Optional condiments: Aioli, mayonnaise, tartar sauce, hot sauce
Instructions:
1️⃣ Prepare the Mackerel Mixture:
In a bowl, flake the drained mackerel with a fork.
Mix in red bell peppers, bacon, Parmesan, parsley, cayenne pepper, and eggs.
Stir well to combine.
2️⃣ Form the Patties:
Gradually mix in the bread crumbs (or pork rinds) until the mixture holds together.
Shape into small patties (about 2–3 inches in diameter).
3️⃣ Cook the Patties:
Heat olive oil in a skillet over medium heat.
Cook patties for 3–4 minutes per side, or until golden brown and crispy.
Transfer to a paper towel-lined plate to drain excess oil.
4️⃣ Serve & Enjoy!
