Honey Dijon Chicken with Creamy Broccoli Penne 🍯🥦
**Ingredients:
- 2 boneless, skinless chicken breasts (bite-sized pieces)
- 3 cloves garlic (minced), 1 tsp onion powder, 1 tsp smoked paprika, 1 tsp salt, ½ tsp black pepper
- 1 cup penne pasta, 2 cups broccoli florets
- 1 cup heavy cream, 2 tbsp Dijon mustard, 1 tbsp honey, ½ cup chicken broth
- ½ tsp red pepper flakes (optional), ½ cup grated Parmesan cheese, ½ tsp dried thyme, ½ tsp ground nutmeg
- Extras: 2 tbsp olive oil, fresh parsley for garnish
**Directions:
1. Cook the Pasta & Broccoli – Boil penne according to package instructions. In the last 2 minutes, add broccoli florets to the pot. Drain and set aside.
2. Sauté the Chicken – Heat olive oil in a pan over medium heat. Add chicken, garlic, onion powder, paprika, salt, and black pepper. Cook until chicken is golden brown and fully cooked. Remove from pan.
3. Make the Sauce – In the same pan, add heavy cream, Dijon mustard, honey, chicken broth, red pepper flakes, thyme, and nutmeg. Simmer for 3–4 minutes until thickened. Stir in Parmesan cheese.
4. Combine Everything – Add the cooked pasta, broccoli, and chicken back into the pan. Toss until coated in the sauce.
5. Garnish & Serve – Top with fresh parsley and extra Parmesan if desired. Enjoy!
