Potato Pancakes Recipe
Ingredients:
2 cups mashed potatoes (approximately)
1-2 eggs
¼ cup flour
Salt, to taste
Pepper, to taste
Garlic, to taste (optional)
Onion, to taste (optional)
Chives, to taste (optional)
Cheese, to taste (optional)
Oil or Butter for frying
Sour cream or applesauce, for garnish (optional)
Directions:
In a mixing bowl, combine mashed potatoes, egg, flour, salt, pepper, garlic, and any optional ingredients. Stir until well blended.
Preheat a skillet over medium heat and add a couple of tablespoons of oil or butter.
Ensure the mixture is not too thin; it should be thick enough to hold its shape when frying.
Scoop about ¼ cup of batter and carefully place it in the hot pan, pressing slightly to flatten.
Cook for about 3-4 minutes per side, or until golden brown and crispy.
Transfer to a paper towel-lined plate to drain excess oil.
