Crockpot White Bean and Ham Soup
Ingredients:
1 lb dried white beans (or 2 cans, drained)
2 cups cooked ham, diced
1 onion, chopped
2 carrots, diced
2 celery stalks, chopped
3 garlic cloves, minced
6 cups chicken broth
1 tsp dried thyme
1/2 tsp black pepper
1 bay leaf
Salt to taste
1 tbsp parsley, chopped (for garnish)
Directions:
1. If using dried beans, soak overnight and drain. If using canned beans, rinse and drain.
2. Add beans, ham, onion, carrots, celery, garlic, broth, thyme, pepper, and bay leaf to the crockpot.
3. Cover and cook on low for 6-8 hours or high for 3-4 hours until beans are tender.
4. Remove bay leaf and season with salt to taste.
5. Garnish with parsley and serve hot.
