Lemon Herb Tilapia with Spinach Spaghetti

Zesty Lemon Tilapia over Garlic Spinach Spaghetti

Ingredients:

4 tilapia fillets

2 tablespoons olive oil

1 tablespoon lemon zest

3 tablespoons lemon juice (freshly squeezed)

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon paprika

Salt and black pepper to taste

250g (about 9 oz) spaghetti

4 cups fresh spinach, chopped

1 tablespoon olive oil (for pasta)

1/4 teaspoon crushed red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Lemon wedges, for serving

Directions:

Cook spaghetti according to package instructions. Drain and toss with 1 tablespoon of olive oil, chopped spinach, garlic, and red pepper flakes in a large pan over medium heat until spinach is wilted. Set aside.

Season tilapia with lemon zest, lemon juice, oregano, paprika, salt, and pepper.

Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add tilapia and cook for 3–4 minutes per side, or until golden brown and cooked through.

Serve tilapia fillets over spinach spaghetti. Garnish with fresh parsley and lemon wedges.
