Parmesan Crusted Chicken with Creamy Garlic Sauce
Ingredients:
4 boneless, skinless chicken breasts
1/2 cup grated Parmesan cheese
1/2 cup Italian-style breadcrumbs
1 teaspoon garlic powder
Salt and pepper to taste
2 eggs, beaten
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese (for sauce)
1/2 teaspoon Italian seasoning
Fresh parsley, chopped (for garnish)
Directions:
Flatten chicken breasts to even thickness using a meat mallet. Season both sides with salt, pepper, and garlic powder.
In a shallow bowl, combine 1/2 cup Parmesan cheese and breadcrumbs.
Dip chicken into beaten eggs, then coat with the Parmesan-breadcrumb mixture.
Heat olive oil in a large skillet over medium heat. Cook chicken for 4–5 minutes per side or until golden and cooked through. Remove and set aside.
In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
Add heavy cream and chicken broth; stir to combine.
Stir in remaining 1/2 cup Parmesan cheese and Italian seasoning. Simmer for 3–4 minutes until slightly thickened.
Return chicken to skillet, spoon sauce over top, and simmer for 2 more minutes.
Garnish with fresh parsley and serve hot.
