Honey Sriracha Shrimp with Zucchini Noodles
Sweet & Spicy Sriracha Shrimp Over Zoodle Nest
Ingredients:
1 lb large shrimp, peeled and deveined
2 medium zucchini, spiralized
1 tablespoon sesame oil
2 garlic cloves, minced
1 tablespoon grated fresh ginger
3 tablespoons honey
2 tablespoons sriracha
1 tablespoon low-sodium soy sauce
1 tablespoon lime juice
1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
1 tablespoon sesame seeds
2 green onions, sliced
Salt and pepper, to taste
Directions:
In a small bowl, whisk together honey, sriracha, soy sauce, lime juice, and cornstarch slurry if using. Set aside.
Heat sesame oil in a large skillet over medium-high heat. Add garlic and ginger and sauté for 1 minute, until fragrant.
Add shrimp to the skillet, season lightly with salt and pepper, and cook for 2–3 minutes per side until opaque and cooked through.
Pour in the honey sriracha sauce and stir to coat the shrimp. Let it simmer for 1–2 minutes to thicken slightly.
Add zucchini noodles and toss everything gently for another 1–2 minutes until the zoodles are just tender but not soggy.
Remove from heat and garnish with sesame seeds and sliced green onions. Serve immediately.
