🍓 Strawberry Swirl Cheesecake Cookie Cups

Ingredients
For the Cookie Cup Dough
½ cup unsalted butter, softened 🧈
½ cup brown sugar
¼ cup granulated sugar

For the Cheesecake Filling
8 oz cream cheese, softened 🧀
⅓ cup granulated sugar
1 egg yolk
½ tsp vanilla extract
For the Strawberry Swirl
⅓ cup strawberry jam or sauce 🍓
Optional: squeeze of lemon juice for brightness 🍋
Instructions
🔥 Preheat Oven
Preheat your oven to 350°F (175°C). Lightly grease a muffin tin.
🍪 Make the Cookie Dough
Cream together butter and sugars until fluffy. Beat in the egg and vanilla. Add flour, baking soda, and salt, and mix until a soft dough forms.
🥄 Shape the Cups
Roll dough into 12 balls and place them in the muffin tin. Use your thumbs or a spoon to press down the center and shape into cups.
🧁 Mix the Cheesecake Filling
In a bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth and creamy.
🍓 Assemble the Cups
Spoon cheesecake filling into each cookie cup, filling nearly to the top. Add a small dollop of strawberry sauce and use a toothpick to swirl it gently into the filling.
