1 tbsp olive oil
2 cloves garlic, minced

Salt & freshly cracked black pepper to taste

4 oz cremini mushrooms, finely chopped
1 tbsp olive oil
2 cloves garlic, minced
ยผ cup fresh basil leaves ๐ฟ
2 tbsp grated Parmesan cheese ๐ง
ยผ cup heavy cream
Salt & freshly cracked black pepper to taste

Instructions
1. Marinate & Cook the Chicken
In a bowl, toss chicken bites with olive oil, minced garlic, salt, and pepper.
Heat a skillet over medium-high heat. Add butter and cook the chicken until browned and cooked through. Remove chicken and set aside.
2. Prepare the Crispy Garlic-Herb Pesto Roasted Potatoes
Preheat oven to 425ยฐF (220ยฐC).
In a bowl, toss potato cubes with olive oil, minced garlic, basil pesto, oregano, salt, and pepper.
Spread potatoes in a single layer on a baking sheet and roast for 20โ25 minutes, or until golden brown and crispy, flipping halfway through.
