Lemon Cheesecake with a Shiny Glaze
Ingredients:
1. 200 g of digestive biscuits (crushed).
2. 100 g of melted butter.
3. 500 g of cream cheese.
4. 200 g of sugar.
5. 3 eggs.
6. Juice and zest of 2 lemons.
7. 100 g of sour cream (optional).
8. 100 ml of lemon curd or lemon jam for the topping.
Brief Preparation:
1. Mix the crushed biscuits with melted butter and press into the base of a mold to form the crust. Refrigerate.
2. Beat the cream cheese with sugar, eggs, lemon juice, and zest until smooth.
3. Pour the mixture over the crust and bake at 160°C (320°F) for 40-50 minutes.
4. Let it cool, then top with lemon curd or lemon jam. Decorate with a lemon slice and chill in the fridge before serving.
