Creamy Spinach Penne with Grilled Turkey
Velvety Spinach Penne Tossed with Tender Grilled Turkey Strips
Ingredients:
300g penne pasta
2 tablespoons olive oil
2 garlic cloves, minced
2 cups baby spinach
1 cup low-fat cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
400g turkey breast, sliced
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
Juice of 1/2 lemon
Directions:
Cook penne pasta in salted boiling water according to package instructions. Drain and set aside.
In a bowl, coat the turkey slices with paprika, oregano, lemon juice, salt, and pepper.
Heat 1 tablespoon of olive oil in a grill pan over medium heat. Grill turkey for 4–5 minutes per side until golden and cooked through. Set aside.
In a large skillet, heat the remaining olive oil and sauté garlic until fragrant.
Add spinach and cook until wilted, about 2 minutes.
Pour in the cream and bring to a gentle simmer. Stir in Parmesan until melted and smooth.
Toss the cooked penne into the sauce, mixing until well coated.
Slice the grilled turkey and arrange over the creamy spinach pasta.
Garnish with more Parmesan and a sprinkle of pepper before serving.
