Ingredients:
For the Steak:
2 (8-ounce) sirloin steaks, about 1-inch thick
2 tablespoons olive oil
4 tablespoons butter, divided
4 cloves garlic, minced
1/4 cup dry white wine (optional)
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper to taste
For the Alfredo Tortellini:
1 pound cheese tortellini
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons butter
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions:
1. Prepare the Steak: Pat the steaks dry with paper towels. Season generously with salt and pepper.
2. Sear the Steak: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steaks and sear for 3-4 minutes per side, until a nice brown crust forms. Reduce heat to medium.
3. Add Garlic and Butter: Add 2 tablespoons of butter and the minced garlic to the skillet. Cook for 1 minute, stirring constantly, until the garlic is fragrant.
4. Deglaze (Optional): If using white wine, pour it into the skillet and scrape up any browned bits from the bottom. Let it simmer for 1-2 minutes, until slightly reduced.
5. Finish the Steak: Reduce heat to low. Add the remaining 2 tablespoons of butter, and baste the steaks with the butter mixture for 2-3 minutes per side, until they reach your desired level of doneness (use a meat thermometer for accuracy: rare 125°F, medium-rare 130°F, medium 140°F, medium-well 150°F, well-done 160°F).
6. Rest the Steak: Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes before slicing. This allows the juices to redistribute, resulting in a more tender steak.
7. Prepare the Alfredo Sauce: While the steak rests, cook the tortellini according to package directions. Drain and set aside.
8. Make the Alfredo Sauce: Melt the butter in a saucepan over medium heat. Add the minced garlic and cook for 1 minute, until fragrant.
9. Combine Ingredients: Stir in the heavy cream, Parmesan cheese, salt, and pepper. Bring to a simmer, stirring occasionally, until the sauce thickens slightly (about 3-5 minutes).
