Another day, another salad! This Irish Pub Salad is made with green leaf lettuce, cucumber, tomato, onion, aged Irish cheddar, hard boiled egg, pickled beets, pickled green beans and a tangy Dijon vinaigrette.
Lemon Dijon Vinaigrette:
- 2 tablespoons extra virgin olive oil.
- 1 tablespoon red wine vinegar.
- 1 tablespoon fresh lemon juice.
- 1 teaspoon dijon mustard.
- 1 small clove crushed garlic.
- 1/2 teaspoon dried oregano.
- 1/2 teaspoon salt.
Add all ingredients to a small mason jar, close lid tightly and shake well to combine.
