Deliciously Spicy Black Bean & Quinoa Veggie Burgers! 🔥🍔🌱

Ingredients:
1 can (15 oz / 425g) black beans, rinsed and drained
1 cup (185g) cooked quinoa, cooled
1/2 cup (60g) breadcrumbs (use gluten-free if needed)
1/2 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 cup chopped fresh cilantro
1-2 teaspoons hot sauce (optional, adjust to taste)
Binder: 1 flax egg (1 tbsp flaxseed meal + 3 tbsp water, rested 5 min) OR 1/4 cup mashed sweet potato
Salt and pepper to taste
Oil for cooking (optional)

Directions:
1. In a large bowl, add the rinsed and drained black beans. Mash about half to three-quarters of them with a fork or potato masher, leaving some whole for texture.
2. Add the cooked quinoa, breadcrumbs, chopped onion, minced garlic, chili powder, cumin, smoked paprika, chopped cilantro, optional hot sauce, and your chosen binder (flax egg or mashed sweet potato) to the bowl.
3. Mix everything together thoroughly until well combined. Season with salt and pepper to taste. The mixture should hold together when pressed. If too wet, add more breadcrumbs; if too dry, add a splash of water or vegetable broth.
4. Divide the mixture into 4-6 equal portions and form into burger patties, about 3/4 inch thick.
5. To cook: Pan-fry in a lightly oiled skillet over medium heat for 5-7 minutes per side, until heated through and nicely browned. OR Bake on a parchment-lined baking sheet at 400°F (200°C) for 15-20 minutes, flipping once, until firm.
6. Serve hot on burger buns with your favorite toppings like lettuce, tomato, avocado, onion, pickles, and sauce.
