Grilled Lobster Tails with Smoky Garlic Butter

Ingredients
- 4 lobster tails
- 4 tablespoons melted butter
- 2 cloves garlic, finely minced
- 1 teaspoon smoked paprika
- 1 tablespoon fresh lemon juice
- Salt and freshly ground black pepper to taste
- Chopped fresh parsley for garnish
- Lemon wedges for serving
Instructions
Start by preparing the lobster tails. Use kitchen shears to carefully cut through the top of the shell lengthwise, from the wide end toward the tail fin. Gently pull apart the shell and lift the lobster meat out, resting it on top of the shell while keeping it attached at the base. This gives a beautiful presentation and allows even grilling.
In a small bowl, whisk together the melted butter, minced garlic, smoked paprika, lemon juice, salt, and pepper. This will be your flavorful marinade.
Place the prepared lobster tails on a tray and generously brush the lobster meat with the garlic butter mixture. Let the lobster tails marinate for about 10 to 15 minutes while the grill heats up.
Preheat your grill to medium-high heat. Once hot, place the lobster tails on the grill with the meat side facing down. Grill for about 4 to 5 minutes, just until light grill marks appear. Flip the tails so they are shell-side down, and continue grilling for another 3 to 4 minutes, or until the meat is opaque and firm to the touch.
Remove the lobster tails from the grill and drizzle them with any remaining garlic butter. Sprinkle chopped parsley over the top for a fresh, vibrant finish.
Serve the grilled lobster tails immediately with lemon wedges on the side for squeezing. Pair with grilled vegetables, baked potatoes, or a chilled glass of white wine for a perfect summer seafood meal.
