Grilled Steak & Shrimp with Loaded Mashed Potatoes, Cheesy Broccoli, and Dinner Roll

Ingredients:

For the Steak & Shrimp:
2 ribeye or sirloin steaks
8–10 large shrimp, peeled and deveined
2 tbsp olive oil
1 tbsp butter
Salt and freshly ground black pepper
1 tsp garlic powder
1 tsp smoked paprika
Fresh parsley, chopped (for garnish)
Skewers (if using wooden, soak in water for 20 minutes)
For the Loaded Mashed Potatoes:
2 lbs russet potatoes, peeled and cubed
½ cup milk
4 tbsp butter
1 cup shredded cheddar cheese
4 slices bacon, cooked and crumbled
Salt and pepper to taste
2 tbsp sour cream (optional)
Fresh chives or parsley, chopped (for garnish)
For the Cheesy Broccoli:
2 cups broccoli florets
1 tbsp butter
1 tbsp flour
¾ cup milk
1 cup shredded cheddar cheese
Salt and pepper to taste
For the Dinner Rolls:
4 store-bought or homemade dinner rolls
Optional: melted butter for brushing

Instructions:

Prepare the Mashed Potatoes:
Boil potatoes in salted water until fork-tender, about 15 minutes.
Drain and mash with milk, butter, and sour cream (if using) until smooth.
Stir in half of the cheese and season with salt and pepper.
Top with remaining cheese, bacon bits, and herbs.
Cook the Broccoli:
Steam or boil broccoli for 3–4 minutes until just tender; set aside.
In a saucepan, melt butter, add flour, and cook for 1 minute.
Slowly whisk in milk until smooth and thickened.
Stir in cheese until melted. Combine with broccoli and season to taste.
Grill the Steak:
Rub steaks with olive oil, salt, pepper, and garlic powder.
Grill or sear in a hot skillet for 3–4 minutes per side, or to desired doneness.
Add butter during last minute and baste. Rest under foil 5 minutes.
Grill the Shrimp:
Toss shrimp in olive oil, smoked paprika, and a pinch of salt.
Thread onto skewers and grill 2 minutes per side until pink and firm.
Warm the Rolls:
Heat rolls in oven at 350°F (175°C) for 5–7 minutes.
Brush with melted butter if desired.
Assemble:
Plate steak with shrimp skewer on top or to the side.
Add a scoop of loaded mashed potatoes and spoonful of cheesy broccoli.
Place dinner roll on the plate.
Garnish with chopped parsley or chives.
Serve hot and enjoy!
