📝 Ingredients:
1½ cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
1 cup plain Greek yogurt
1 cup granulated sugar
3 large eggs
1 tbsp lemon zest
2 tbsp lemon juice
1/2 tsp vanilla extract
1/2 cup vegetable oil
1 cup blueberries (fresh or frozen, tossed in 1 tbsp flour)
👩🍳 Instructions:
🔥 Preheat oven to 350°F (175°C). Grease and line a loaf pan.
🥣 In a bowl, whisk flour, baking powder, and salt.
🍋 In another bowl, mix yogurt, sugar, eggs, lemon zest, lemon juice, and vanilla.
🛢️ Slowly whisk in oil until fully combined.
🫐 Fold in flour mixture, then gently stir in flour-coated blueberries.
🍞 Pour batter into loaf pan and smooth the top.
⏲️ Bake 50–60 minutes, or until a toothpick comes out clean.
❄️ Cool in pan 10 minutes, then transfer to wire rack to cool completely.
