Cheesy Scalloped Potatoes
Ingredients
✅ For the Scalloped Potatoes:
• 2 lbs russet or Yukon gold potatoes, thinly sliced (about ¼-inch thick)
• 1 small onion, finely sliced
• 2 tbsp unsalted butter
• 2 tbsp all-purpose flour
• 1½ cups milk (whole or 2%)
• 1 cup heavy cream (for extra richness, or use all milk)
• 1 tsp garlic powder
• ½ tsp salt
• ½ tsp black pepper
• ½ tsp smoked paprika (optional, for a hint of smokiness)
• 2½ cups shredded cheese (cheddar, Gruyère, mozzarella, or a mix)
• ½ cup grated Parmesan cheese (for extra cheesiness on top)
Instructions
1️⃣ Preheat the Oven:
• Set your oven to 375°F (190°C).
• Grease a 9×13-inch baking dish with butter or nonstick spray.
2️⃣ Prepare the Cheese Sauce:
• In a medium saucepan, melt butter over medium heat.
• Whisk in flour and cook for 1-2 minutes until lightly golden.
• Slowly whisk in milk and heavy cream, stirring constantly until smooth.
• Add garlic powder, salt, black pepper, and smoked paprika.
• Simmer for 2-3 minutes, until thickened.
• Remove from heat and stir in 1½ cups shredded cheese, mixing until melted and smooth.
3️⃣ Layer the Potatoes:
• Arrange half of the sliced potatoes in an even layer in the baking dish.
• Sprinkle half of the sliced onions over the potatoes.
• Pour half of the cheese sauce evenly over the layer.
• Repeat the process with the remaining potatoes, onions, and cheese sauce.
4️⃣ Top with More Cheese & Bake:
• Sprinkle remaining 1 cup of shredded cheese and grated Parmesan on top.
• Cover with foil and bake for 30 minutes.
• Remove foil and bake for another 20-25 minutes, or until the potatoes are tender and the top is golden brown.
5️⃣ Rest & Serve:
• Let the scalloped potatoes rest for 5-10 minutes before serving.
