A tasty and fun twist on the traditional lemon meringue pie 🙂 🍋
UPSIDE DOWN LEMON MERINGUE PIE
1/2 cup sugar
pinch of cream of tartar
2 egg whites, room temp.
4 egg yolks, beaten
additional 1/2 cup sugar
1/4 cup lemon juice
grated rind of 2 lemon
2cup whipping cream
Preheat oven to 275 degrees F.
Butter a 9" pie plate
Whisk together 1/2 cup sugar and cream of tartar, set aside
In a mixing bowl beat egg whites till stiff. Gradually add sugar, beating until smooth and glossy. Spread mixture over bottom and sides of pie plate. Bake 1 hour or until crisp to touch. cool completely. Make filling- In a saucepan add egg yolks, 1/2 cup sugar, lemon juice, and half of the lemon rind, mix well. Cook on medium heat, stirring continuedly, until thick. Remove from heat and cool.
Whip cream until stiff peaks form. Fold half into cooled lemon filling, save other half. Place filling into cooled meringue shell, cover and chill until ready to serve. Top with remaining whipped cream and garnish with grated lemon grind. 🍋🍋
