In the '60s and '70s America it was almost impossible to travel any distance without spotting a bright orange roof. And under that roof they were serving 28 flavors of ice cream and platefuls of fried clams. #HowardJohnson

FRIED CLAMS
1 quart calms (pinch out black in belly)
2 eggs, whisked
2 Tbsp. milk
salt 'n pepper to taste
1 tsp. baking powder
Mix eggs, milk, salt, pepper and baking powder together. Dip clams a few at a time in this mixture. Then mix your clams into some cracker meal. (Optional - 1 tablespoon flour may be added to this cracker meal.) Cover well.
Fry in hot fat 3 minutes at 375 degrees F.. Clams should be turned carefully to brown. Drain on paper paper. Serve hot.
