Blueberry Cheesecake Rolls
**Ingredients:
- 1 package crescent roll dough (8 rolls)
- 4 oz cream cheese, softened
- ¼ cup powdered sugar
- ½ tsp vanilla extract
- ½ cup fresh or frozen blueberries
- 2 tbsp granulated sugar
- 1 tsp cornstarch
- 1 tbsp lemon juice
- 2 tbsp melted butter
- 1 tbsp coarse sugar (optional, for topping)
**Instructions:
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
3. In another bowl, combine blueberries, granulated sugar, cornstarch, and lemon juice.
4. Unroll crescent dough and place a spoonful of cream cheese mixture on each triangle. Top with a few blueberries.
5. Roll up each crescent dough tightly and place on the baking sheet.
