A delicious recipe for Butter Pecan Cake with Cream Cheese Frosting

Ingredients:

For the Cake:

2 cups all-purpose flour

1 1/2 cups granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup unsalted butter, softened

1/2 cup sour cream

4 large eggs

2 teaspoons vanilla extract

1 cup pecans, chopped and toasted (toast them lightly in a pan for extra flavor)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar (adjust to desired sweetness)

1 teaspoon vanilla extract

A pinch of salt (to balance the sweetness)

Instructions:

For the Cake:

1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans (or line with parchment paper).

2. Toast the pecans: In a skillet over medium heat, toast the chopped pecans for 5–7 minutes, stirring occasionally, until they are fragrant and slightly browned. Remove from heat and set aside to cool.

3. Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

4. Cream the butter: In another large bowl, beat the softened butter until light and fluffy (about 3-4 minutes) using a handheld or stand mixer.

5. Add eggs and sour cream: Add the eggs one at a time, mixing well after each addition. Then add the sour cream and vanilla extract and beat until smooth.

6. Combine wet and dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

7. Fold in pecans: Gently fold the toasted pecans into the batter.

8. Bake the cake: Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

9. Cool: Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

For the Cream Cheese Frosting:

1. Beat the cream cheese and butter: In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.

2. Add powdered sugar: Gradually add the powdered sugar, one cup at a time, mixing well after each addition until the frosting is thick and smooth.

3. Add vanilla and salt: Add the vanilla extract and a pinch of salt, and beat until fully incorporated.

Assemble the Cake:

1. Once the cakes are completely cool, place one layer on a serving plate.

2. Frost the first layer: Spread a generous amount of cream cheese frosting over the top.

3. Top with the second layer.
Place the second cake layer on top and frost the top. Next add third layer and frost the top and sides of the entire cake.

4. Optional: Garnish with additional toasted coconut or pecans on top or around the sides for extra flavor and texture.

Enjoy your buttery, rich butter pecan cake with creamy frosting!
