Ingredients:

For the Crust:

1Β½ cups graham cracker crumbs
Β½ cup pistachios (chopped)
Β½ cup melted butter
2 tbsp sugar
For the Cheesecake:

16 oz cream cheese (softened)
1 cup sugar
2 eggs
1 tsp vanilla extract
Zest of 1 lemon
Zest of 1 lime
2 tbsp lemon juice
2 tbsp lime juice
Β½ cup pistachios (chopped)
1 cup fresh or maraschino cherries (halved and pitted)
For the Topping:

1 cup whipped cream
ΒΌ cup pistachios (chopped, for garnish)
Fresh cherries (for garnish)
Instructions:

Preheat oven to 325Β°F (160Β°C). In a bowl, mix graham cracker crumbs, chopped pistachios, melted butter, and sugar. Press the mixture into the bottom of a springform pan to form the crust. Chill in the fridge for 15 minutes.
In a large bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla, lemon zest, lime zest, lemon juice, and lime juice. Mix until well combined.
Fold in chopped pistachios and halved cherries into the cheesecake batter.
Pour the cheesecake mixture over the chilled crust and smooth the top. Bake for 50-55 minutes or until the center is slightly set. Let the cheesecake cool completely before refrigerating for at least 4 hours.
Once chilled, top with whipped cream, garnish with chopped pistachios and fresh cherries before serving.
Notes:

For extra citrus flavor, drizzle a bit of lemon or lime syrup over the top before serving.
