โข 2 avocados (diced)

cup red onion (diced)
โข 1 can black beans (15 oz, rinsed and drained)
โข 1 can black-eyed peas (15 oz, rinsed and drained)
โข 1 ยฝ cups thawed frozen corn kernels
โข 1 bell pepper (diced)
โข 1 jalapeรฑo (seeds removed, finely diced)

cup fresh cilantro (chopped)
โข Tortilla chips for serving
For the Dressing:

cup olive oil
โข 2 tbsp fresh lime juice
โข 2 tbsp red wine vinegar
โข 1 tsp granulated sugar
โข ยฝ tsp salt
โข ยฝ tsp black pepper
โข ยผ tsp garlic powder

Combine tomatoes, avocados, onion, black beans, black-eyed peas, corn, bell pepper, jalapeรฑo, and cilantro in a large bowl. In a separate bowl, whisk together the dressing ingredients. Pour over the vegetable mixture and toss to combine. Refrigerate until ready to serve. Serve with tortilla chips.
