Ingredients:
2 ½ cups all-purpose flour
1 tsp baking soda
1 tsp cornstarch
½ tsp salt
1 cup unsalted butter, room temperature
¾ cup brown sugar, packed
½ cup granulated sugar
2 large eggs, room temperature
2 tsp vanilla extract
1 ½ cups semi-sweet chocolate chips
1 cup toffee bits (such as Heath bits)
Instructions:
In a medium bowl, whisk together the flour, baking soda, cornstarch, and salt. Set aside. ⏱️ 3 minutes
In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and creamy. ⏱️ 2-3 minutes
Add in the eggs, one at a time, beating well after each addition. Then mix in the vanilla extract. ⏱️ 1 minute
Gradually mix in the dry ingredients until just combined — don’t overmix! ⏱️ 2 minutes
Fold in the chocolate chips and toffee bits with a spatula until evenly distributed. 🍫🍬 ⏱️ 1 minute
Cover the dough and chill in the refrigerator for at least 1 hour. This enhances the flavor and prevents spreading. ❄️ ⏱️ 1 hour
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
Scoop the dough into 2-tablespoon-sized balls and place them 2 inches apart on the prepared sheets.
Bake for 10-12 minutes or until the edges are golden and centers still look slightly underbaked. 🍪 ⏱️ 10–12 minutes
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack. ⏱️ 5 minutes
