Healthy Nut & Seed Energy Cookies
Ingredients:
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup chia seeds
- 1/4 cup flaxseeds, ground
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/2 cup chopped mixed nuts (almonds, walnuts, pecans)
- 1/4 cup unsweetened shredded coconut
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Directions:
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine rolled oats, almond flour, chia seeds, ground flaxseeds, sunflower seeds, pumpkin seeds, chopped nuts, shredded coconut, baking soda, and salt.
3. In a separate bowl, whisk together honey (or maple syrup), melted coconut oil, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and stir until well combined.
5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, flattening each slightly with the back of a spoon.
6. Bake for 12-15 minutes or until the cookies are golden brown around the edges.
7. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
