Dorito Casserole
Ingredients:

1 (10–12 oz) bag nacho cheese Doritos (crushed slightly, but not to crumbs)
1 lb ground beef (or ground chicken/turkey)
1 small onion, diced
1 (10 oz) can Rotel (diced tomatoes with green chilies), drained
1 (10 oz) can cream of chicken soup
1 (8 oz) can corn, drained (optional)
1 (8 oz) can black beans, drained and rinsed (optional)
1 cup sour cream
2 cups shredded cheddar cheese (divided)
1 cup shredded mozzarella cheese
1 packet taco seasoning
1/2 cup milk
Sliced black olives, jalapeños, cherry tomatoes, and fresh cilantro for topping (optional)
Instructions:

Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
Cook the Meat:
In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain excess fat. Stir in the taco seasoning and cook for 1 minute more.
Mix the Filling:
Add the Rotel, cream of chicken soup, corn, black beans, sour cream, and milk to the skillet. Stir until everything is well combined and heated through. Remove from heat and mix in 1 cup of the shredded cheddar cheese.
Layer the Casserole:
Spread half of the crushed Doritos evenly in the bottom of the prepared baking dish. Spoon the meat mixture over the Doritos and spread evenly. Top with the remaining Doritos, then sprinkle the rest of the cheddar cheese and all of the mozzarella cheese over the top.
Bake:
Bake uncovered for 20–25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
